The Drmola Family Winery is located in the village of Bavory, at the southern foot of the Pavlov Hills. It is located in an area with ideal conditions for growing and processing grapes. The small guesthouse directly above the wine cellar provides visitors with a cosy base not only after tastings, but also for the whole holiday.
Establishment
The Drmol family came to the area below Pálava from Wallachia a long time ago and started producing wine only in their third generation. The founder of the winery in its present form is cellar master Jaroslav Drmola. He gained his experience while working in several prestigious wineries in Lower Austria. The family winery is now run by the eldest daughter Klára and her boyfriend, who have worked in wineries in New Zealand. The winery specialises mainly in appellation wines, with Riesling, Pálava, Sauvignon, Chardonnay, Pinot Gris, Dornfelder, Zweigeltrebe and Frankenfruits among the most sought after. The Drmols farm about 16 hectares of vineyards in an organic regime in the lines Pod Pálava, Pod státní, Anenský vrch, Vršky, U Rybníčka and Maliny with typical limestone bedrock, which gives the wines an unmistakable character. The winery strictly applies the principle of quality, reduces the yield to an optimal level and harvests the grapes essentially by hand. The south-western slopes of the Pavlov Hills have some of the best conditions for growing grapes in the Czech Republic. The vinification technologies for white wines are aimed at strengthening and emphasising the influence of terroir - wines from the slopes of the Pálava limestone escarpment are characterised by a special composition of aromatic substances and a distinctive acidity. The red rums undergo a long maceration period of two months before being pressed, and the wines are aged for at least a year in wooden barrels. Also worthy of attention in the winery of Jaroslav Drmola are the ice wines. The Drmola family recently completed the reconstruction of the old cellar in the winery premises into a representative tasting room with a capacity of up to 40 visitors. Visitors to the winery can use a small comfortable guesthouse directly above the historic wine cellar. There they will find cosy and romantic facilities in four rooms for relaxation after a tasting, for a pleasant weekend or even for a whole holiday. The winery has achieved significant success in competitions at home and in Austria, Slovakia and the USA.
