Bronislav Vajbar is a classic case of a winemaker who was brought to wine by his ancestors. The family tradition of growing grapes and making wine goes back far in the family history. This is evidenced by the surviving family tree, which mentions winemaking as early as the end of the 19th century. From the age of 10, Bronislav helped his grandfather and father in the cellar. This is where the love for land and wine was formed. "As boys we used to look forward to picking grapes, back then still in wooden vats. We also looked forward to the juice and sometimes a few secretly drunk pints of bourbon. Of course, it had its downsides - I didn't really enjoy green work, digging or taking out the vines". Over time, he found that working in the vineyard and cellar brought not only joy and enjoyment from the wine produced, but also financial gain. At the age of 16, he produced his first 150 litres of wine for sale. Shortly after he turned 18, he obtained a trade licence and started a wine production business - at first mainly for cask wines. Since 1994, wine has become his main source of livelihood. The first 3 years were tough, he had to learn everything himself. On his travels abroad he discovered that winemakers were bottling more than 80% of their production and selling it at a significant profit. This led to the decision to start producing bottled wines alongside the already established cask wine production. His decision was met with an increasing market demand for bottled and later predicate wines in this country. Here too, as is his custom, he slowly began to experiment. First he produced quality wines for 3 years, trying what the wine would do in the bottle, how it would age and react to various external stimuli. Naturally, not only production but also technology evolved over time. Until 2000, the funds were directed into planting vineyards; since 2000 they have come into technology. The controlled fermentation, the pneumatic press, the high quality mill have shown a leap in quality. Therefore, the improvement and modernisation of the technology continued. The production of wine, whose quality is of the utmost importance, is supported by the personal approach of the cellar master and the choice of appropriate technology. The cellar farm uses all the modern technology needed for wine production. This includes two vacuum presses, which are used to press white and blue grapes so that the must is slowly and gently released. Another integral step in wine production is controlled fermentation, which helps to keep the wines at a low temperature during fermentation to avoid overheating the musts. You will also find vinifiers or systems that allow cryomaceration. An important step in the production of wine is also the filtration with a silica filter, which guarantees a gentle treatment of the future wine. In 2007, the winery already purchased a modern automatic bottling line, which allows for high-quality bottling of wines. In 2014, it was time to improve the bottle closure system and also to give the bottles a new, modern design that gives a better indication of the wine's character. Another major breakthrough came in 2015, when the winery moved to newly renovated premises in Zaječ. This modern facility, with its large storage capacity, will allow the wines to be aged for as long as necessary and will simplify the logistics of production, which until now has taken place in three locations.
